The major houses are headquartered in Reims and Épernay, the two main towns of the Champagne region, and most offer year-round cellar visits that are well organized and tourist-ready. Visiting a grower-producer is a different experience — more artisanal, usually requiring an appointment made in advance — but you see the actual work up close, which tells you a great deal about why the wines taste the way they do.
The traditional method: why it takes so long, and why that matters
The traditional method — formerly known as the méthode champenoise, a name now legally reserved for Champagne alone and no longer permitted on the label of any other sparkling wine — creates its bubbles from the inside. Grand cru, premier cru, village: how Champagne's classification actually works
Champagne ranks its villages on a scale running from 80 to 100%, a system known as the Échelle des Crus — literally the 'ladder of growths'. A village rated at 100% carries the designation Grand Cru. There are exactly 17 of them: Aÿ, Ambonnay, Avize, Beaumont-sur-Vesle, Bouzy, Chouilly, Cramant, Le Mesnil-sur-Oger, Louvois, Mailly-Champagne, Oger, Oiry, Puisieulx, Sillery, Tours-sur-Marne, Verzenay and Verzy. The system was originally designed not as a quality rating in the usual sense but as a commercial pricing mechanism. When a house bought grapes from a grower, the official price per kilogram was multiplied by the village's percentage: fruit from a 100% Grand Cru village fetched the full reference price, while fruit from an 80% village fetched 80% of it. When grape prices were liberalised and this mechanism was dismantled, the percentages disappeared from everyday use — but the Grand Cru and Premier Cru designations stayed on labels, and they still mean something real. That said, a Grand Cru designation does not automatically guarantee a better wine than a carefully tended village-level site. When to open what: a practical guide to getting the timing right
A Brut Non-Vintage from one of the major houses is designed to be drunk now — not in two years, not next decade. These cuvées are assembled for freshness, liveliness and immediate accessibility. Keeping them for extended periods generally does not improve them; the blend has been calibrated for a precise window, and holding a NV Brut past 18 months from purchase usually works against rather than for the wine, unless you have access to storage that replicates proper cellar conditions closely.
A vintage Champagne is an entirely different proposition. Too cold and the wine closes down entirely — the aromas disappear and you taste little beyond the acidity and bubbles.
